Pistachio-crusted Salmon

Serves 2:

3/4 cup unsalted shelled pistachios

2 large egg whites, lightly beaten

2 salmon fillets

1/4 tsp salt

1/4 tsp pepper

  1. Preheat oven to 375 degrees F. Brush olive oil on an oven safe dish and set aside.

  2. Get two shallow bowls and set aside. Finely chop pistachios by placing in a food processor OR placing them on a flat dish and crushing them with the bottom of a glass cup. Once chopped, set pistachios into one of the shallow bowls. Place egg whites, pepper and salt into the other bowl and lightly whisk them.

  3. Sprinkle salmon with salt and pepper to task, dip into egg mixture then dredge in pistachios. Press on the salmon lightly to adhere pistachios.

  4. Place on oven-safe dish and back for 15-20 mins.
