Street Corn

Serves 4:

5-6 ears of corn

1/4 cup extra virgin olive oil

1/2 cup Veganaise/Vegan Mayo of your choice

2 tbs Nutritional Yeast (I enjoy the nacho spice flavor)

1 lime, juiced

1/4 cup cilantro

1 tsp chili powder

2 tsp smoked paprika

1/2 tsp pepper

  1. Preheat oven to 425*F. Combine 1/4 cup of olive oil and 1 tbs smoked paprika. Brush mixture on corn and wrap in tin foil. Place directly on oven rack and bake for 25 mins.

  2. Once corn is roasted and cooled, cut corn off the cob and place into a bowl. Add next 7 ingredients to bowl and mix thoroughly.

  3. top with fresh cilantro to serve.
