Baked Sweet Potato Fries

1 lb sweet potatoes, peeled (use a variety! Garnet, Jersey, Japanese, etc)

2 tbs Extra-virgin Olive oil

2 tsp cornstarch

1/2 tsp paprika (smoked or regular)

1/2 tsp garlic powder

1/2 tsp pepper

pink Himalayan salt to taste

1/4 tsp crushed red pepper (optional - if you want them spicy)

  1. Slice the sweet potatoes into long strips (Be consistent as possible with their width so they cook evenly!). Add fries to a bowl of cold water and soak for a minimum of 30 minutes.

  2. Preheat oven to 425F. Line a baking sheet with parchment paper or aluminum foil then set aside.

  3. Drain fries and blot dry with a clean towel. Add them back to the bowl and drizzle fries with oil. Toss the fries so they are evenly coated in the oil.

  4. In a separate bowl, combine cornstarch and spices. Mix spices thoroughly, then sprinkle over fries. Toss fries until they are evenly coated.

  5. Spread fries in an even layer on baking sheet. Bake for 15 mins then remove from oven and flip each fry over. Bake for 10 more mins - or until they are crisp to your liking.

Cornstarch will give the fries a crispy texture without having to fry them!
